Down to Arizona

Ok so I'm tentatively planning a trip from Minneapolis all the way down to Scottsdale, AZ where my parents are moving. So far all I've got written down on my itinerary is the first day we are driving all the way to Denver. Along the way I would like to stop at Moab and go on as many trails as I can through Colorado, ending a week later. I need help finding trails along the way

What time of the year is this trip happening? The higher mountain Colorado trails are pretty well snowed in until mid summer. The eastern foothills will open up in mid May or so.
