I don't see the difference between adding a spacer, or adjusting the spring perch height on a front shock. Lots of people extol the virtues of adjustable height front shocks. But spacers are frowned upon?
OP already has top-quality suspension, nothing wrong with adjusting it.
Correct. Spacer can always be an option, but right now I have bounciness and sag because of the weight of the bumper and winch, so even a spacer or the new Eibach spring which will be a 600# spring might not help with that. That's my dilemma. Wondering if any suspension experts would know if the 600# Eibach spring they're creating for the 1.8" of lift would have stiffer characteristics than the current Fox (Eibach) spring on the stock Fox suspension?

Then taller springs of the same rate won't change the bounciness, they will just raise the front end.
They won't act stiffer.

Well, scratch everything I said...per my usual approach to everything in my life, I say one thing and do something completely different.
The truck is back at GAS for the suspension upgrade. I ended up going with Kings after all, as GAS made me an offer I couldn't pass up (Long story). They are being custom built to what i need them to do and will be complete by Friday and sent to Gas then for install (They've been working on them since Saturday.)
For now, I'm keeping the rear height as is by just replacing the shocks only with bypass 3-tube Kings
As for the fronts, 2.5 remote ressies with adjusters and they are being paired with Camburg UCAs...

Yes, fronts are fully adjustable.

Nice. I think you'll be happy with that choice - swapping out there rear springs later, if you decide to go a bit higher, is super easy.
Correct. Going to see how the 2” lift in front looks and then see if I need to add the Eibach 1” in the rear.
