If you had ever planned on lifting it now would be the time to do it so your not buying struts twice.
Checkout shockwarehouse.com they have pretty good prices on stock length shocks and struts, if it were me I would replace both at the same time.

I really don't think I plan to lift as I will stick with stock tire sizes or one size bigger.

I know the front end feels like it's riding on bedsprings. How would I know if the springs are too worn?

If your springs are original, then they should be replaced also. Especially since you are already doing shocks/struts. Depending on your budget, you could get it all separate or buy a coilover/ strut that already comes assembled. If you buy springs separate, buy oem.

Monroe quick strut comes to mind. They are about 100 a piece. You check oem parts price also. I lifted mine, so I am not familiar with too many stock replacements. Suggest you do a google search and make the best decision for you.

I dont know about the front but replacing the rear is easy. I actually left the opposite tire on when i did mine last weekend. All i needed was a bottle jack, the stock jack that came with the truck and my ratchet set.
I just used the bottle jack to jack up the truck and the stock jack to slowly lower the axle down as needed.
