Most people go with the 265/75/16 or 285/75/16 (or their equivalent on the 17" rim; I'm not familiar with those sizes). That's basically a 32x10.5 and a 33x11 (ish). They're way fatter than the 255 and both look great, with my personal favorite being the 285.
For brands, my research has told me that the BFG A/T KO and the Goodyear Wrangler Duratracs are pretty much the top picks for all terrain; although perhaps not everyone's favorites, they're probably the most popular. The Duratracs are (in my research) a little bit better, but a little bit more expensive, and the BFGs have a bit longer of a life.
For muds, I'd say go with the KM2, but with any mud you'll have the same issue with them being loud and not great on the road, but they're great if you like mud and mud-like terrains.
