I agree with aquasport, there isn't a huge pool of resources out there, and even fewer where it's all compiled into one spot. I didn't do a full write up on the removal, and I have the v6, but maybe my engine swap can give a little insight. Posts #4-5 are the prep and removal. And here is a semi-complete list of steps I could think of off the top of my head, but don't take it as 100%:
Drain and remove radiator
Disassemble all air intake hoses + fuel lines
Remove fan and fan shroud
Remove serpentine belt
Unbolt starter + bell housing
Unbolt power steering pump
Unbolt ac compressor + lines
Remove starter
Unbolt flywheel
Unbolt + remove exhaust manifolds
Disconnect all plugs and lines (like coolant lines and transmission line brackets)
