So when you hit the text button and it's showing the name of the artist for example, will it stay on the artist name until you hit the button again or does it go away after 10 seconds? I want to at least be able to look down and see who's playing without having to hit the text button each time...

The Alpine CDA-9851 (sold on Crutchfield) is the only deck right now that actually has OEM Steering Controls integrated into the stereo. This is true integration, not the cruddy PAC-SIWX (or whatver it's called) that uses infrared. The Toyota to Alpine steering control box should be available...
