If it's sitting fairly level you have the correct amount of fluid in it. The fact that you drain less out than what you put in simply means it was low on diff oil. Whether that was from a past leak, prior maintenance not performed correctly or......................, doesn't matter much now...

Depending on the condition of the rest of the frame structure you might be able to hit up the local Pick a Part or check Marketplace for one being parted out. Judging by just what I can see in the single pic, I would say the days of this vehicle being road worthy are done over. Just my .02...
