for your sink, it should work very well. no wasted water, waiting for the warm/hot to travel from the heater, through the pipes, to the tap.

for a sink, a quality brand is pretty much unbeatable for hot water. i did not like the on-demand for a shower, but that was 20+ yrs ago, so current models are probably better.
Is yours a tank or tankless heater?
it isn't mine, but it is/was tankless.
my house uses a conventional propane HWH.
That's my preferred route, just need to make sure I can find one that works well while not drawing too much to need a dedicated circuit.

Testing the sink in the morning it uses just under 2 gal of water to get the hot to the tap. Leaning towards the Bosch Tronic 3000T in the 2.5 gallons size.
Have you looked into a proper recirc system instead of a POU?
I was a plumber for 4 years before I went back into carpentry. The only POU heaters I ever installed at that time where tankless. Commercial building bathrooms are where I've used them. Never in a residential home.
Any homeowner having the old "wait for hot water" symptoms would be quoted for running
a recirc line and pump.
If you go with a tank unit keep in mind your system in a closed system. So, you'll have 2.5 gallons of hot water, then 2 galllons of colder water still in the line. It'll get hot, then cooler, then hot again. The only way to get hot water within a few seconds and keep it that way is by adding a recirc.
I considered a reciprocating setup before, but decided that it wasn't worth it just for one sink really. And definitely get that about a POU tanked system. One of the cons for sure. But I feel like it's not often I really need a whole lot more than 2.5 gallons of hot (figure that's probably closer to 4-5 gallons total when mixed with cold water).
I'm still not opposed to a tankless system. Like I said in a previous post. Would just want to make sure that it can be wired the existing outlet.
Anyone with experience with one? Water at the kitchen sink takes forever to heat up. Thinking of installing one. Trying to figure out the pros and cons of tank vs tankless as well as if anyone has any experience with any particular model.
Have one tankless in our work trailer. It only has a cold water line to it. I think even the best ones only get like a 40 degree rise or something. I don't know how that would work if you attached the hot water line to it cause then the water itself is going to get hot eventually. Make sure you check flow rates. Ours warms only at a slow trickle. Faster and it's luke warm. So better than nothing...
I think if using just to wash hands rinse a quick dish this would be good. But if you are actually doing dishes or longer activities, just wait til the water warms up?
Thanks for the info. Appreciate it. Your above experience is one reason I am tentatively planning on installing a small tanked heater. The rise on any tankless heater that fell into the non-dedicated circuit category were not all that great. With a small tanked heater, I can have immediate access to fairly hot water. Yes, after I use 2.5 gallons, it will be back to cold, but at least I could fill the sink with hot water and then rinse with cold until it warms back up again. Not to mention most of the time 2.5 gal of hot will be plenty.
I have a tankless water heater at my house. It's an older one without the recirculating so it takes a few minutes for the water to get hot, but it'll scald your skin if you don't tone it down.
