265 vs 275

I'm trying to decide which size I want to run next. Either 265/75/16 or 275/70/16.

265 would be 1" over stock height while 275 would be about .8" over stock height and .4" wider.

Is one better than the other?

I honestly think any disadvantages or advantages either way are going to be so very minimal it really doesn't matter. Clearance isn't going to be an issue and gas mileage difference might be a fraction of a fraction of 1mpg. Looks wise probably won't even really be a noticeable difference. I think you may have a difficult time finding the 275/70 in a lot of tires (you may have looked into that already, just a guess) so I would just pick which tire you want and go with whichever size they have available.

I currently have 265/75/16, but I think my next set will be 275/70/16. I think I want the beefier tire rather than the taller one.

Surface traction or contact patch is largely dictated by tire pressure.

A 265 and a 275 at the same psi will have the same area on the ground. The differecne being the 265's contact patch is longer while the 275's is wider. The 275 will provide better lateral traction as a result.

These two tires are so similar I think it would come down to what is available in each size and the price of each one.

Wider tires will provoke Hydroplaning on wet surfaces.

Yep,wider will cut the margin of error down concerning hydroplaning so at least pick a tire that does decent in the wet weather if you go wider.

Taller is more important if you are off road.

Yep. This is pretty much what I thought. Nothing significant either way.

275/70/16 only has a small selection of tires. The only ones I would be interested in are the BFG's. Although hearing about hydroplaning kinda pushes me away from the BFG's.

I might just go to a tire shop and compare the two sizes side by side.

if they have the same contact area one won't provide better traction than the other.
