I don't know about the legal ramifications of your agreement, but I do know that you do NOT want them to "install" a sunroof on your new truck! I don't think they could do that without tearing up the roof, and you don't want to take the chance of having leaks or whatever.
On mine, the side view mirror was messed up, so they decided to switch out the entire driver's side door ... they seemed to act like it was an easy enough thing to do, but I can't imagine there being a simple way to "install" a sunroof on your 4Runner if it doesn't already have one ... and I certainly would not recommend it!

It's a typo
They can't be held over a barrel for a typo error on a sheet, even if it is a contract. If you and the dealer are both aware that you purchased a vehicle which did not in fact have a sunroof to begin with, they aren't obligated to provide one now.
As far as dealer installed or aftermarket sunroofs, it' s a mixed bag. Some turn out fine, some are nothing but problems. Even the OEM Toyota installed sunroofs had their share of rattles and malfunctions. Hopefully, most were fixed with the TSB for the rattle.

Yup even if they install one, it's going to be outsourced so Toyota themselves aren't going to be the installers.

Since the loan contract is tied to a specific vehicle by the VIN, you are stuck with what the vehicle was orginally configured with. Besides, you really don't want them cutting into your roof to add a sunroof. Factory installed sunroofs have drains that will channel any water that leaks from the sunroof into a tube in the A-Pillar dumping it out below the vehicle. Also, vehicles with factory sunroofs also have galvinized sheet metal roof, not just primed, to prevent rust build up.
