Brakes for T4R, SR5 Tow Car

The title pretty much says it all. I have seen the posts on switching our the rotors, calipers, ad pads for Tundra parts in the front. This is an East Coast vehicle driving in the Great Smokey Mtns.

Are any changes recommended for the rear shoe type brakes? Can discs be put on the rear?

Thanks for any advice and how-to tips. I am fairly capable at doing my own work and I have backup at a good garage, if needed.
