Can 3 car seats fit in the 2nd row? Two rear facing and one forward facing.

Depends on which car seats. We have Diono Radian RXT’s and have been able to fit two of them forward facing with a rear facing Chico key fit 30. Some of the wider convertable seats would be tough to fit in and secure safely. You could definitely fit 3 of the diono’s in the arrangement you are describing but they are tall when rear facing. Unless you are 5’ tall you need the seat angle adjuster (which we have) to be able to move the front seats back enough to be comfortable. It’s only $10.
 
I had 3 Diono Radian RXTs across in my 5th gen but all forward facing. Never had them rear facing. Went from 2 rear facing Cybex aton2 infant carriers in the outboard seats and a forward facing RXT in the center because of space needed for the front seats. After they outgrew the cybexs, moved to the 3 forward facing RXTs and had plenty of room.

Like you describe would work, but depending on the front seat positions. Also accessing the center seat would require the child crawling under the rear facing dionos like a tunnel, which my oldest loved doing at the time!

Go find a baby store like BuyBuyBaby (if in your area), they let you test fit car seats and seat combinations. I was able to try different combinations of seats/carriers in both of our cars to make sure they fit before blowing $1200 on 6 seats! Good luck!
 
I haven’t done it, but I suspect the clek foonf or fllo would fit. We have two cleks now and wouldn’t have any other car seat now. If you have a sunroof though the clek foonf is a tight fit from seat to roof rear facing. It sits up really high. My son loves it.
