The air bag sensors are still there. Problem is the bumper is much more rigid then the plastic one. So it will take a larger impact to get them to deploy.

That is completely false. The airbag sensors are measuring deceleration speed, not force of impact.

Because it's made of metal not plastic. They are based on shock and g-force of deceleration...
The deformation of the OEM bumper will cause a slower the rate of deceleration. The more rigid bumper should cause the sensors to register/trigger faster.

There is an aluminum bumper with 2 hollow tubes connecting the bumper to the frame, which are designed to 'gently' crush in an impact. Most aftermarket bumpers remove those tubes and will transfer more energy into the frame in the same impact, compared to the stock bumper.
As far as I know, ARB is the only aftermarket bumper which retains the tubes.
