Just curious, how much would it cost to wrap a 4runner (manpower & materials)?

It all depends on the shop doing the work, material you choose, amount of detail you want them to do.
Some shops will do a pretty crappy job, slapping the cheapest vinyl on your vehicle, will not remove the ancillary items (like handles/mirrors/emblems, etc.) and just cut around stuff or wrap directly over them. This cuts the time down considerably, which makes it cheaper, but does not look great.
Other shops will remove plastic panels, door handles, lights and other items so they can wrap and terminate behind stuff so you can't see any cuts. They will also not splice panels together unless its absolutely necessary. All splits are done at body panel breaks (ie., between fender and door, or roof and hatch).
Finally, the material used. You can get cheap-ass chinese wrapping vinyl from AliExpress, doubt it will last more than a year outdoors and will be a royal pain to remove when you want to get rid of it!
You can go for Avery, 3M or Oracal vinyl, which are all, in my experience, good, solid performers for vehicle wrap material and are what you'll find in most shops.
Or, you can go with the uber-expensive stuff, like Hexis or Vivid, which are almost twice the cost per yard than the other stuff above! They also have some very unique colors and textures that you won't get with the more standard stuff, which is why they're more expensive.
So, its hard to say how much a 4runner wrap would be. Most shops charge around 10 to 12 bucks a square foot for vehicle wrap installs, but if they're going to do it right, you could be looking at anywhere from 2500 to 6 grand.
If I were to go back to wrapping cars, I'd be at 4500 bucks for a 4runner, but that would include 3M 1080 cast vinyl, and I would remove ALL items off the vehicle before wrapping. I'd also take about 5-7 full days to do the installation.
