EFI rebuild - Difficulty/Cost?

So I guess I should start to address a few other things that have been neglected. I know I will need a new Cat before my next smog in two years (advice on brand) and would this help improve my mileage at all? I currently get 15mpg an obviously would love to eeak out a few more. Although I have replaced the engine I have never had any work performed on my injection system. It has had an intermittent rough idle/ stumble for some time now. Complete tune up does not fix it and it stuck around after the new engine so..... Should I assume it has to do with the EFI having 300,000 miles on it? Is it costly and or difficult to do the replacement of the injectors? What have you guys done?

Shortly after (300 miles) I bought my 87 the head gasket let loose. Not a surprise but it would have been nice to get a few things done before ripping it down but you never totally know.
While I had the manifolds off I replaced the seals and cleaned the injector screens and replaced the seals. Its not difficult and the seals aren't that expensive. You didn't mention a few other details like tires, gearing, transmission type. How about the timing is it correct? So far I've gotten right at 20 MPG bone stock. The motor is a bit tired (223K) with the compression 150# from each cylinder. You should be able to get closer to 20 IMO.
