1995 v-6, 5 speed. I got it from the first owner, so i have the whole history of it. But it does have 190,000 miles and has a slight oil leak. I have to get under there and clean the engine to pin point it, but since it does not leak much, and I smell it, does it mean maybe the valve cover gasket? Cleaning the engine is the best way to find a little leak right? and when I am at a street light, my oil pressure drops, but goes up again when I accelerate, is that a sign of a problem? and my Temp gauge will go up and down randomly, so I am thinking a sticky thermostat? Sometimes it gets close to being in the red zone, but it dosent, but it still worries me.

The iol pressure dropping could be something simple like low on oil or it may severely need an oil change.
The leak is likely coming from above the exhaust manifold if you can smell it. That should make it easier to find. The other thing to do is when you get it home after a longer drive pop the hood and see if there is any smoke. It may just be a small amount but it will help you figure out where the oil is hitting the exhaust. Once you have a general idea then just bust out the trouble light and start looking. If you can smell it you will be able to find it.
The temp guage is one to look at soon. You want to ensure that your truck is not getting hot. A hot engine can cause some serious issues for you like head gaskets. Again, check your coolant level and start with checking the thermostat. For the price of the thermostat, I would just replace it. If the proplem persists, you will have to look at other possibilities.

Are these the OE dash gauges or after market? With the latter I know that you may ofter see a slight drop in oil pressure at idle as opposed to normal driving. Your other problem sounds like a sticky thermostat. Easy fix and depending on when it was done last a coolant flush might not be a bad idea either.

100% Normal. Oil pressure drops at low RPM as your oil pump is driven by the engine.
Common oil leaks are the valve cover gasket and oil pan.

I just replaced the Valve cover gasket. It took me about three hours. Really simple and it took care of my oil leak. I would recommend using gasket maker with the new gasket. Be careful putting the old bolts back on the cover because they are brittle and will break if you use a torch wrench. So I would recommend replacing the blots if you have the money.
