Rear camera and recording

This is roughly a two part question:

Ideas as to how to display whats on the rear camera without being in reverse?

Ideas as to how to record from the rear camera while you're driving?

I always thought about a 5 min duration of looping tape (or self erasing digital) to help in rear-end situations. Plus, sometimes you want a close look at the license plate of the person riding your ass when you're driving down the road (and yeah, people do get that close here in CA)

My head unit has an option to view the output from the rear view camera. It is a Pioneer AVIC-D3 and if I hit map twice the option for rear view comes up, when selected the camera shows up. My headunit also has a video output for extra screens but I dont have my headrest monitors in yes so I don't know if it outputs everything, or just the video from my iPod.
