Replaced head gasket, no temp gauge....?

Head gasket repair complete, all fluids topped off. Engine idles well, but the temperature gauge never moves. I hate to let it idle for too long, but I removed the thermostat to eliminate that possibility.
How do I determine if I have airlock or flow?

This is what my torque app says after 10 minutes at idle:

Temp sensor in back of center of engine probably didn't get reattached. It's just a single wire sensor, blade-and-spade type. Different than computer sensor which is more forward on intake. Gauge sensor is hard to access and see. Gotta stick your hand down by the firewall about 4-5 inches below top of intake plenum.

If you're trying to get intake air temp, that's the wrong one to use for Torque. You want "Intake Air Temp" which is the sensor that is in the MAF
