Should I change transmission fluid or not?

Do you mean should you do a flush? You aren't really using the right verbage, but that's what I assume you're asking. There is a video by [MENTION=120071]mtbtim[/MENTION] doing the flush and also write-ups as well.
Repeating the same info as the last few posters:
Do it if you feel like you can; but keep in mind it will be the best time to also do an Aux cooler if you prefer as well as a Magnefine in-line filter. You can do more research on Aux transmission coolers, but you don't have to avoid it just because you don't tow. You get the extra cooling even if you don't tow & you're already set up for the future if you have to end up towing something. At least that's the situation I'm in.
Keep a new radiator replacement in mind to avoid the pink milkshake; also a good time to do it as you will probably be on suicide watch if you get the pink milkshake right after a full tranny fluid flush as you'll have to do a new radiator then and flush your tranny out multiple times to even try to save it. To avoid all that for a $100 new radiator, I'd do it in a heartbeat in your shoes.
To answer your other question, get the OEM Toyota filter ("screen") and new magnets for the pan.

If you do a drain and fill every 30k miles to keep it fresh.......do you need the expensive stuff. It's so easy changing fluid......

I will never touch my tranny drain plug again. Those things are fragile as ****. Mine stripped while removing the plug. Luckily I was able to re-thread it and installed a new plug. Saved me from having to replace the whole pan. Just undo the tranny coolant hose on the bottom of the radiator, I believe on the passenger's side. Start the motor and and see the fluid flow out. I did it 2 quarts at a time. Get a gallon milk carton and mark off at the 2 quart mark so you know when you stop. Then stop motor and fill with 2 new quarts of fluid through the tranny dipstick. Keep doing this till you see clean red fluid flow out of the hose. Doing it this way ensures you get all the old fluid out of the torque converter as well as the pan. You'll use around 12 to 14 quarts. BTW I use Amsoil ATF.

I took a mixing bucket from my brother, then bought a top for it, drilled a hole the size of a quarter in the middle of the top, stuck the 6ft of hose from the return line of the radiator through the hole and watched the old fluid fill it, 4 quarts at a time (no more than that) until the returned fluid was bright red....

Tranny fluid drain and fill
Doing the transmission fluid drain and fill on 2000 T4R limited with 3.4 V6. A340e(I think) transmission. Curious how much should go back in. I would have measured what came out but it was over full. Haynes manual says 2.1 quarts. Would appreciate any advice. Also, where can I get the crush washer for the drain plug? A part number would be great. Thanks in advance. This forum is excellent. Learning a lot.
