The Best Chili
1/2 pound Bacon -SAVE THE GREASE
1lb of hot sausage
1lb of course ground beef
2 cans pinto beans
1 large can (28 Ounces) of whole peeled tomatoes-chopped fine
1 large onion
1 large red/green pepper
1 large jalapeno-chopped fine
Salt/Pepper to taste
1 package of chili seasoning-use a top shelve brand
3 garlic cloves
1 chipotle pepper-chopped
1 tea spoon Chili Powder
1 table spoon crushed red pepper
1 tablespoon grated unsweetened chocolate
Fry Bacon (crumble fine), sausage (crumbled and chopped fine), ground beef, and put in pot. Add pinto beans, tomatoes, onion, peppers, garlic, chili powder, red pepper, chocolate, and seasoning mix. Then add hot sauce to taste, Bring to a boil and then simmer for about 3-4 hours.
While the chili is cooking, get some Martha White's self rising corn meal mix and make the corn bread recipe. Put a cast iron skillet in the oven and pre-heat the oven to 450 with the skillet in the oven. When the oven is to temp. take the skillet out and pour the bacon grease (let the grease cool) in the skillet, just enough to cover the bottom of the skillet, and then add the corn bread mix. cook for about 20 mins.
