What can I use for an electic thermostat?

I replaced the mechanical fan bolted to the water pump with an electic fan. Has anyone else done this? The kit came with a 185 deg. on thermostat. One of those kind with the temp probe you stick through the radiator. Well it doesn't work to good. The engine temp gets up to almost 200 deg before the fan kicks in.

I think I need a more accurate temp sensor. Is there anyway I could use a stock one to control the fan.

Also if I did come across an aftermarket or stock one. Where is a good place on the block to screw it in? Where is an extra threaded hole?

Not sure what temp probe you have, but my buddy mounted his temp sensor (wire/probe) inside the radiator hose. It is attached between the radiator inlet pipe and radiator hose. I would like to go eletric one day also.
