I have never done that before but do you believe it would work? That would definately be cheaper and easier then doing a full reinstall. I was looking at the backside of the bolt and am unsure what they use to attach the bolt securely.

Yes I know it can be done, but I'm not that familiar with the V6, I have a V8, but looking at the part on the link above and the link I'm posting here below the following quote, it looks like the inlet part you're looking for has studs(?) instead of bolts, is that correct?
If so if you remove the themostat housing, part of the stud may still be sticking out enough to get a pair of visegrips on it to remove it, if not then it will have to be removed with an EZ Out.
That being asked and said if it does have studs they maybe a pressed in stud instead of a double threaded stud that threads into the water inlet and if that the case it will not come out by simply turning it, but it maybe possible to still drill it out and tap threads into the water inlet so you can either use a double threaded stud or just use a bolt there.
TowMeOut has a great suggestion in removing the water inlet and taking it to a machine shop and have them do what needs to be done so you don't have to remove the broken stud/bolt or replace the water inlet.
If you look around you can find a special drill that cuts counter-clockwise. Sometimes if you're lucky the action of simply drilling out the bolt will cause it to come out.
How much access do you have to the assembly? If it's going to be really tough to access with a drill then maybe you can remove it then take it to a machine shop. I'd bet they can extract the broken stub pretty easily.
The parts list from Bossman's 2nd link looks like there's 2 different assemblies depending on whether or not you have the towing package.

Edit: Just a word of caution, if you do end up ordering a new water inlet, call the part source first and give them your VIN number to be certain you get the correct inlet, since there's seems to be 2 different parts that could fit your 4R, it's possible that the website listings could be incorrect as to which one is which, your VIN should insure you get the right one!!
