Since I can't get a definite answer as to why this would have happened, I'll probably order larger tires maybe 280/70/17 to regain ride height. Don't think I want to add additional lift since it's already lifted about 2.5" front and about 1.5" rear. Open to any other suggestions. Thanks.

I was going by the manufacturer Firestone specs. The old tires and new tires were both the same model just going from a 16" to a 17" (but overall diameter remained the same)
