1GR-FE typically a noisey motor?

Oil doesn't make engine less noisy. You can't be serious suggesting that it does. Maybe solid lifters and cam chains might something to do with it? It sounds harsh from day one and you can't fix something that isn't broken. Changing viscosity of oil may be a bad idea if oil channels and bearing tolerances were designed for 0W20.

I noticed the engine noise when I first got my 4Runner back in February, but didn't think too much of it because it honestly sounded what I imagined a V6 version of the 5.0 Mustang I had just traded in would sound like. Both the 1GR-FE and the Coyote motor are DOHC, 4v, with twin independent cam/valve timing; they have noisy valvetrains. If it suddenly stopped sounding the way it did, or started throwing a knock code, I'd be worried. If/until then, I'll just pretend I have a little diesel and have fun with it.
