Was wondering, what makes the rear locker, last available on the '00s I think, different/superior to the center locking diff available on the 01-02 models? Thanks

The rear locker, when engaged, makes the rear wheels spin together. It would be useful if one was off the ground or something like that.

Well yeah, the rear locker locks the two rear wheels together.

There's no way the center locker locks all 4 wheels, because the individual diffs are not LSDs. I'm assuming the center diff locks the two axles together and makes the diffs turn at the same speed, but still doesn't lock any of the wheels together?

Yeah, that's right.
 
The center diff lock has nothing to do with off-road performance, just the opposite.

The purpose of the center diff lock is to allow you to run the center diff unlocked on dry, paved roads, which basically gives you AWD (or full time 4wd if you want to be pedantic.)

So the center diff adds nothing to off-road performance, but it gives the 4runner better all-weather on-road performance.

When you lock the center diff, the 4wd functions exactly the same as a non-center-diff equipped conventional 4wd vehicle: 50% of the torque goes to the front axle and 50% to the rear.

Martinjmpr is absolutely correct. The center diff gives you nothing over a normal 4x4 off road - it just gives you an AWD option for on road. Now, the rear diff locker (either in a normal 4x4 or in the multi-mode center-diff-locking version) will make a huge difference. Easy way to think about it for OFF-ROAD purposes:
Rear diff locker = Awesome!
Front diff locker = Awesome! (aftermarket only)
Center diff locker = Who cares!

What about spinnin' donuts in 2wd locked?? No really though, I don't think I've ever seen anyone in a 4runner w/ just a front locker and no rear.

No, a rear locker is far more useful than a front , and can be used in just about all offroad applications. Try going down a really steep hill with the front locked, you will have almost zero steering ability.
Not one single auto company has ever offered only a front locker
