How do Adjustable shocks work? What are their pros, cons, and limits?

you're gonna have to be more specific. are you talking about height adjustable shocks or adjustable valving?

Height adjustables. Such as the 5100 bilsteins

The lower spring seat sits on a clip that goes into a groove on the shock body. There are a few grooves that provide different amounts of lift. The shock is inboard of the wheels by ~1/2 way so the distance between grooves provides ~ twice the lift. (1" of lift on the shock will yield ~2" of lift)

Bilstein 5100's have a stock height setting plus 3 settings; .85", 1.75" and 2.5". The main difference between these and other height adjustables is that these are a shock only, meaning you use your old springs or throw on new ones. Adjustable coilovers such as Toytec, fox, Icon, etc come with the spring too are adjustable from 0-3" to any height inbetween. They are also re-buildable, where as the Bilsteing 5100's are not. Bilstein 5100's are around $200, while the coilovers go for $500+ (more realistically around $700-1000).
