BBQ/Smoking Meat

Fantastic thread / some serious outside chiefs here, and I'm having fun soaking up the good info. / never smoked before, but results sure look delicious.

My Natural Gas NXR BBQ (Costco brand) always starts with the family doberman Kelly, and little Trevor (YorkiePoo) when son visits on weekends.
- they always gets some bbq taste testing & last bite (most critical) / this night was bean salad, home made burgers & chicken breasts

Wife calls me her sous chief, as I like to dice up the ingredients / we made homemade squash-potato soup, for the first time.
- amazing taste & great appetizer
Obviously, no room for desert / but last home made pie, was wild berry / one before was pecan.

Smoked it for almost 4 hours in a Combo of Apple wood, Hickory Wood and the oak that was in the box for fire wood. Wrapped it up after the smoking was done and double wrapped it so the liquid would not get out from the fat drippings. I always cook the fat up also so it keeps the meat moist.

It does make it much easier when smoking and BBQ'ing. Next spring I'll add a dishwasher, then I'm set !!!
 
Based on [MENTION=147125]mrmark[/MENTION]'s post of his amazing outdoor area, how about the rest of us post up our grilling areas where the magic happens? I'll start. For years we only had a small, sloping patio and my Big Green Egg was in its rolling nest. I'd pull it away from the wall and chock the wheels with a piece of gutter guard. Then we got a puppy and all of this happened because of her. She always wanted to go mess with the horses so I had to keep her on a leash the whole time outside. Now she knows where to go and not go and I can throw her ball over the fence anywhere and she brings it right back. The rest of the time she just hangs out like in the last pic. I call this area my biergarten and my wife calls it a courtyard. It is a great place to hang out in all seasons.

It started with a pedestal because I didn't want the BGE to roll away and it leveled the cooking surface. I built the deck and fence around the patio as well as the cabinet with a poured concrete countertop. I then ran patio pavers over the old patio to level that up. Lastly, I added the outside patio as a landing pad for the pooch as she races out to fetch the ball. She was digging a huge hole making the sharp turn. :D

Looks good to me! Besides, a nice setup does not guarantee good food..... and that's what matters. I was going to get an Egg but could not resist the deal on my Traeger. I'm outside right now smoking ribs and turkey sausage.....drinking a beer.

You can't beat a charcoal fire for flavor. I use oak lump charcoal. I usually use Royal Oak lump in the big bag or the oak lump that Academy Sports sells. I don't like Cowboy lump that you get at Lowes and places. I find the consistency in size and type of wood isn't there and I also find lots of rocks in it.

In addition to the lump, I usually throw in a couple of chunks of mesquite, hickory, cherry, apple or pecan depending on what I'm cooking. Mesquite is my go to grilling and smoking wood for most things.
