You say your plan is to jack up the truck, then push it off the jack? If you are brave enough to jack it up from the hitch, that's your call. However, I highly suggest finding rocks to throw under your wheels rather than pushing the truck off the jack... There are so many bad scenarios possible from that type of thinking, the most obvious being the jack cracking back at full force against your truck.

I do think you are correct about the tongue weight, Jordan. A dynamic 700lbs is way different than a static 3000lbs. Good thoughts from both of you, but I agree with Jordan. I have used the tow hitch a few times to lift the rear (as that is my only rear jack point also). It is way unstable, but proper preparations and careful work can handle it fine. I think your chocks are a good idea, and I have thought about a pair myself (more so as extra security if I am stopped on a hill and have to get out while my kids are still in, but your idea seems like another good use)
I am sure you have already read lots of negativity about the use of a Hi-lift, and will continue to hear more. Well, sure it's dangerous, but no more than so many other TOOLS available and used everyday.
Chainsaw, tablesaw, welder... turn your back on any of these tools, and your in for trouble, same with a Hi-lift. Respect it as a tool, and you will do fine.
When the situation is right for using a hi-lift you will be so happy you have it, but don't "force" the situation just because you "want" to use it...then it becomes a toy...don't ever disrespect your T4R by playing with any other toy than it! ha!

I too listened to people and what they had to say but once I made my decision on the Goodyear Wrangler MTR's it was done. Thats what I wanted and thats what I got and couldn't be happier.
