Car Shakes

My 4runner shakes in the morning, especially if it's cold. I can also hear a mild tapping sound until it warms up. I also noticed the engine literally jumps 3-4 inches on ignition. Is this a sign of loose engine mounts?

YES!

fix it! The mild tapping is probably a exhaust manifold crack/break, no doubt caused by your engine JUMPING out of your truck. Try and get it fixed before it does serious damage to your transmission. With the engine "jumping", there is a chance it will push itself out of alignment, which can have some nasty impact on the transmission.

Bad motor mount, shouldn't be too tough to replace though. Might want to do the tranny mounts now too. The bad motor mount will have been stressing them so do it once and do it right.
