Here is a great shot of our Hybrid rear bumper... Same great protection and departure angle clearance of the plate bumper but significantly lighter!

Can you build a hybrid rear with the swing away mount added so I could purchase the complete swing away later and just throw it on? Or would the bumper need to be brought to the shop and be modified to add that?

Yes we can do this but we would have to ad the spindle to the bumper so that would look out of place until you added the swing arm. Or you could cut the hole for the spindle and weld it in yourself when you are ready for the swing arm.
