Driving to Near-Zero temps during First 1,000 miles break-in... Bad idea?

Would it be a bad idea to try to drive my new 4runner to the mountains, where it'll be close to zero degrees F, while I'm still in the break-in process?

No problem. Truck won't know how cold it is once it's initially warmed up.

Shouldn't be a problem at all. You could get a coolant temp tester from any auto parts store to check your coolant; but a new vehicle should be good for temps well below 0F. It is a good idea to let your vehicle warm up to operating temp before driving though.

I purchased my 2011 in February and was living in Anchorage Alaska at the time. If I remember correctly, it got well below zero during the initial 500 mile break-in. Never had an issue.

I was sort of thinking the opposite during break in, we had a few weeks shortly after I got mine where the temps were well exceeding 100 F on a daily basis, I was thinking yikes theres 0W20 in this thing but I'm sure these motors are well tested beyond each extreme of the scale...

Disagree. I believe that it's always best to idle it for 1-2 min and then drive conservatively, letting the engine oil, diffs, trans and transfer case all warm up together. Wastes less gas and makes sense from a mechanical perspective too. I see too many people remote start for 10 min and take off like a bat out of hell.
