I would suggest adding a 1/4" thick spacer to the front to finish leveling it out. With just those shocks/coils, you will get about 1" front and 1/4" rear lift. It will lift the front more than the rear, so yes it will level it out somewhat (but not completely, which is why I suggest the 1/4" spacer).

If I swap in Bilstein 5100s in the front, I can level off with that, right?

Correct....if you use the 5100's I wouldn't suggest a spacer in that case. I'd use the first notch (.85" lift) with the FJ coils and it should level it out nicely. You can also go higher on the front and combine with a spacer on the rear if you're wanting more lift.
