Companies are going to fewer colors I am sure because it is so much cheaper than holding such varying inventory. They are not trying to make an awesome car, just one that will sell, and most people don't want a loud car.
Black, white, silver, grey, candy apple red, navy blue. That's probably 90% of vehicles out there.
I think it has to a lot to do with exporting. In many cultures, colors have certain meanings that can be bad or good, and this changes frequently (because of fad and fashion.) So, big exporters like Toyota and Nissan "play it safe" by making the blandest and most inoffensive colors possible. I think it's not so much that people like gray, it's just that they aren't likely to pass up a gray vehicle as they are one with a more defined color (like if green is no longer "in", then people might pass up on a green vehicle they otherwise would have bought.)
Personally, I have never owned a black vehicle and never plan to own one. I just don't like black for a 4 wheeled vehicle (although for motorcycles, I think black is perfect.) In fact, black is the only color that would cause me to not choose a vehicle I otherwise liked. Any other color, as long as I liked the vehicle, I'd be fine with.
Yes, I would even own a gray vehicle
I've noticed that American cars are more likely to be in vibrant or unusual colors, I think because they are more intended for the domestic market and it's easier for the manufacturers to know what colors are "in" or "out" in the US as opposed to a foreign market.
My current favorite is the metalflake orange that you see on a lot of newer US branded vehicles now.
