So I found this when searching for the mileage I should change my diff oil. Not sure who made this, but does anyone concur this is accurate? Apparently I should have lubricated my hinges

In my 2011 Owner's Manual Supplement under Required Maintenance - Additional Maintenance Requirements:

If you primarily operate your vehicle under any of the following conditions:

1. Short trips of less than 5km (or less than 8 km in temperatures below 0°C).
2. Towing a trailer, using a camper or car top carrier.
3. Driving on dusty or muddy roads.
4. Frequent mountainous driving.

Change transfer case and differential fluids every 24 months / 32,000 km.

If you haven't changed the diff fluid since it was new I'd go ahead and do it. I did mine at about 2500 miles to flush out any break in metal and it was pretty dirty already. Amsoil makes a great 75w-90 gear oil if you don't want to pay the crazy price for the 75w-85 stuff.

Did you just do your rear diffs at 2500 miles (not the fronts or transfer case)? Did you also do a regular oil change at 2500?

I did mine at 8,000 miles for the same reason and could not believe how dirty it was.

I have a similar spreadsheet to track my basic maintenance. I came up with my own intervals using the maintenance guide, educated guesses, and superstitions.
All I do is update my current mileage and it calculates how many miles until the next service is required, or turns red if overdue. It also tracks when wipers were replaced.
I keep a hard copy in the car for part numbers, usually replaced yearly.
