Moab for beginners?

Look into Schafer trail/ Schafer switchbacks. You can run the trail in either direction but I like to start in Canyonlands NP.

White Rim trail. Its easy (2/10) and is the most scenic long trail out there.

I just finished Fins and Things. It was such a fun trail. I don't recommend a stock rig running it. 3" suspension and 33s are recommended IMO. This will help you clear stuff without destroying your stock bumpers.
But short wheel base vehicles like Jeep's should have no issue stock.

I just took my family there 2 weeks ago. I second that you need a lift for Fins and things unless you've got an excellent spotter (I didn't). Also an understanding passenger (I didn't).
As for a gentle drive, we did Hurrah Pass and I've done Tusher tunnel in the past. Just gravelly roads with beautiful views. Gemini Bridges is beautiful to get to and the rough road back is fun as well. Long Pass is an easy trail assuming they've fixed it. It was closed due to the washouts caused by some severe rainstorms.

I like going in the fall, winter, or spring. Summers are just too hot for me there.

The Easter Jeep Safari news letter has a good description of the popular trails. Tells how to get there, as well as difficulty ratings.
Head to Long Canyon (easy) it's scenic, and get a pix for us, you'll know where when you see it. Then off to Gemini Bridges, you can head out of there and take in Bull Canyon, also easily doable. Klondike bluffs is worth looking at the Dino Tracks, and north of Thompson Springs has some of the best petroglyphs ever found. All of these are easily enough to do, and worth the exploration. A trip into Hells revenge is always fun. You can watch at the hot tubs, doubt it would be wise to try that with a stock rig.

Finns& things might be ok for TRD-pro, but probably too much for a stock Limited. Body damage likely, and spotters highly recommended. Some of those ledges are really fun, but tall.

Another worthwhile site. Head out a few miles on Kane Creek. The "Birthing stone" is a must see. Part of the actual Kane Creek trail is doable, if careful in a stock rig. But much of it requires a built Jeep. Sorry guys, but nothing with IFS will tackle that hill. It's just gotten too over used. Even built live axle rigs, with lockers at both ends,tall tires, LOTS of suspension travel, sometimes need a winch on that one these days. It's become a pretty serious rock crawler trail. But on to Chicken corners would be a good ride.

My son and I went to MOAB in June/July.
Shafer Trail is a must. Its right inside Canyonlands NP. Looks crazy but its easy if your brakes dont give out.
You are going down if you start in CLNP.
At the bottom you have a choice to go back up the way you came, or turn left and take a rough road back to Moab, or continue on the White Rim Road for the 80ish mile loop.
You will need 4Lo on a couple climbs on WRT.
WRT is great. WE camped at Murphy A and it was amazing.
Another trick near Moab is the 4WD back door into Arches NP. Its off 191 north of the Arches gate on BLM 378. We bypassed the 1000 car line and had that part of the park to ourselves. Trail is pretty stock friendly. Air down if you head north into the sand part.
Another great place we found was Porcupine Rim. Not really much wheeling, Its at the end of the Sand Flats rec area just outside Moab.

Not sure I'd do fins n things with a stock rig. I came close to scraping my front bumper there and I've got a pretty good approach angle. I drug my rear bumper at fins and things too.
