odd predicament

could be a hairline crack in the head gasket, pull the plugs and see if any of them are a different color this may point to wich cylinder has the crack sucking in coolant.???

You should go to a radiator shop and have them pressure test your system, or drop the $100 and get your own tester. Same thing happened to me a few weeks ago, went to check the coolant and the radiator was half emtpy and no sign of leaks. Went for a pressure test and my heater hoses started spewing. Drove over to Napa and now all is well.

great idea! i didnt think of that it could be just a leaky hose that you wouldnt see but just enough to let some evaporate or steam out.

The shop I went to did the test for free, all they do are cooling systems, AC and intakes. The hoses cost me about $15.00. All I had to replace was the heater core to valve (the small wiggly hose on the firewall) and and the hose going from the core to the pipe on the passenger side. You can save alot of money on that long hose by getting a 5/8 straight hose and cutting it to size. Worked great for me. Oh and get new clamps, cheap insurance.

Well, just FYI that you shouldn't count the head gasket out just yet unfortunately..
I believe water/antifreeze can still leak past into the combustion chamber to exit the exhaust slowly as vapor, while not mixing with the oil.
Hate to say it, but what about one of those snake oils that can seal up leaks (bars leak or something). But those are overall bad for the cooling system, even if you flush it out after sealing...

You should take a sniff at your overflow reservoir, if it smells like aerosol (rattle cans etc..) that means combustion gasses are contaminating your coolant which points to a head gasket.
