oil capacity question (again)

Hey, Y'all.... new here...
Been wranglin' a 'runner for many years. Have an 87 4runner I bought new..... My adopted conscience (wife) said "how can you justify spending $17,200 dollars on a CAR?????" I said "I'm gonna put 300,000 miles on it." Almost there. Anyhooo....
just got an Oh-1 'runner. (too many holes in the 87) After I pour 5.25 qts in it's just barely above the low mark. I've seen the threads regarding oil capacity but my question is: Why don't they tell us how much oil to pour in? And why does it seem like you need to "overfill" to get it up on the stick? Doesn't that take extra energy to move that extra oil? Ok.... one more thing.... Is it a fairly easy DIY to change front rotors on a 2001 'runner?
I have a LOT of wrenching experience but NONE on this ride. If there's stuff best left to a pro, I'm OK with that.

Well, just in case I'm not the only one who didn't know what I was gonna find holding the rotors onto an 01 4RNR.... Piece of cake.
Unbolted the calipers (they even had anti-seize on them.... no "shirt"... the rotors fell off. Slid the new ones on, replaced and torqued the lug nuts; Done.

45 minutes total for both sides.

I have a 96 4runner and when i change my oil i use 6 quarts. I think it asks for 5.5 in the owners manual but the full 6 get it right up to the full mark maybe a hair less.
