A part of me wants to make a portable setup for this and take it camping haha.
That would be pretty cool! I think the hard part if you were to actually do that is making sure that it has a constant water supply.

theesotericone, you mentioned you were a plumber once? If so, I've got a quick question for you. The hot water outlet is 1/2" and my faucet has fixed 3/8" lines. So, I bought a brass reducer. With a few wraps of teflon tape, it leaked. With no tape, it leaked even more. With SEVERAL wraps of teflon tape, leak finally stopped. Is that in any way normal? I ordered another reducer hoping that's the issue. Or should I just not touch it since there is no leak
Link the adapter you purchased. Was the leak on the 1/2" angle stop side or the 3/8" faucet side?
The 1/2" fitting is NPT and those require pipe dope, Teflon tape, or both. The 3/8" fitting is a compression fitting. The thread count and pitch is different then NPT. Those should never require either tape or dope. There's a rubber seat washer in the sink supply line that creates the seal.
As long as you have the correct reducer and the leak was at the 1/2" side your fine. If the leak was at the 3/8 side you could have the wrong reducer or a bad washer in the sink line.
I bought the adapter at Home Depot. And I definitely should have been more clear in my previous post. The issue is on the 1/2" end. No tape on the 3/8" end.
So, just to be clear you wouldn't remove it and use pipe dope? The teflon is fine as is?
The Teflon will be fine as long as the leak is currently stopped. Just keep an eye on it. If it starts to leak again, which it probably won't, then use pipe dope first, then Teflon.
I have not looked at the electric boilers for some time, But I think you will find that the more expensive ones have a small thermal store built in. Enough for here in Guernsey where you only have three two hour peak periods but would not last for sixteen hours. I am sure you could put in a bigger thermal store but that means extra cost and the room to put it.Also check brand AO smith, pretty cheap!
