Question about Modding a 2015

If I put a spacer to level out the front end, add a gobi or baja rack (with ladder), and/or put a bull bar or grille guard on the front end would this affect my warranty at all?

Should the dealer do it or is it something that I can do myself and not void warranties?

Thanks in advance.

No, unless the part that fails is something you have modified or touched. If you install a gobi rack and then have the holes in the roof leak I would not expect a dealer to touch you with a 10 foot pole if you didn't have any issues with the stock rack leaking. If you install a front suspension spacer and you happen to get the 1/100,000 transmissions that fails at 15k miles you shouldn't have an issue.

I would do all the installations your self assuming you are willing to do a small amount of research to understand what the installation entails. If a dealer/shop does it it would not effect the Toyota warranty but certainly should come with a workmanship warranty (i.e. back to the roof rack, if they installed it and it leaked I would expect them to cover you but you may have to twist arms to get that to happen.
