It's cake. Fix a rubber band and ziploc around the brake line so you don't make too big a mess when you pull the caliper.

They are cheap and it's good insurance to do both. A few months ago I replaced both front rotors, pads and calipers for under $200. Probably one of the cheapest brake jobs I have ever done.
And it is pretty cut and dry. Just make sure you bleed your brakes good. If you clamp the line before the caliper then you'll only have to bleed the front. It wouldn't be a bad idea to check your rear brakes while you are in brake mode.

I did just that. Checked the backs as well. Calipers were a breeze. Until I started to try and bleed them and wasn't getting any fluid to the brake. I couldn't figure it out. Until my friend was looking at the MC while I was pumping the brakes and he noticed that the gasket for the reservoir on top of the MC was bad and was sucking air everything I hit the brakes.

Can anyone answer the question about what the rule of thumb is for changing just one caliper?
My front right caliper is bad with a stuck, lower-inside piston. I ordered a new caliper to replace it; however, a friend of mine said that it is "necessary" to change the front-left too if you're changing the right. Essentially, if you change one, you need to change both in order to make sure your breaking is symmetrical.
How legitimate is that? Can I change only one side without exposing myself to maintenance issues, danger, etc?

I would just change the one. If you start pulling to that side when you brake, change the other one too 
.
IME, calipers either work or they don't. They might freeze up, but there's really nothing going on in there that could cause less braking pressure.

No worries, you can change just the bad one.
Just make sure you bleed the system correctly.
