Old thread... but I want to do something similar to this.
•Low profile retains max headroom (ie: sit up or space for ceiling "attic" storage)
•Pull out work surface is very useful
•Relatively simple, light, and removable
•One person sleeping is all I need for this build
•Max space to store totes or fridge next to platform

My Cot can be lowered for more headroom skeeping by cutting the aluminum legs.
I have held off due to the cot being an extra bed when traveling or having visitors.

All points my system takes into account. And i have improved it over the passed few years, mostly cosmetic and added a second table that extends a bit more and is under my totes.

I added tool draw pads to the top of the platform for grip. I also utilised aluminum sheeting in spots where i would use my MSR stove and to protect from heat and some carbon fiber covering for looks. Added some hooks to hold a garbage bag as well. Reinforced edges with aluminum as well.

If there was anything i would do to improve this it would only be a ball bearing slide. The old school way i did it works great but would be nice if it slid out a little easier.

For solo camping I use a cot on passenger side.
Plenty of storage under for plastic boxes and small ice chest. I made a 3 gal pail into a toilet using kitty litter when necessary.
I keep driver side rear seat up for comfortable sitting/ reading. Clothing duffel goes under cot next to seat for easy dressing.
I roll onto or out of seat onto chair so I do not feel crowded. I am 5'11 and 150.
Cot can be cut dowm a couple inches for more headroom.
