How many inches (diameter wise) are we talking between 265/70/16 and 285/75/16?

Would the 285 add about two inches to the total height? I need to know this before I purchase to make sure it will fit in my garage.

Tire heights vary brand to brand. In general a 265/70/16 = approx 30.6", a 285/75/16 = approx 32.9". In addition to variation brand to brand those numbers are 'unloaded' so the real diameter as it affects roof height is a bit less.
