If you get new tires, there's nothing to reset. You don't have to get your tires from a dealer, although make sure the place you go to is aware that you have the sensors (which are part of the valve stem) so that they're careful.
All 5 tires/sensors must be present and working, or you'll get a warning from the system.
As rook pointed out, there are a lot of threads on TPMS, so a search for "TPMS" should give you a lot of useful information.

I decided to check the system to see if it was working properly, so I let some air out of my tire and the light came on as expected. I don't think the system will give a warning if one of the sensors isn't present.
The system checks all 5, and it doesn't know which one is the spare. It has a list of 5 sensor ID numbers, and it checks to make sure all of the sensors on the list are sending data at regular intervals.
There are a lot of threads about the spare tire being the cause of a warning light, either because it was the one that was low or else it was stolen.
Have you had the sensors changed or re-programmed by a dealer for some reason? The only explanation I can think of would be that the ID number for your spare isn't programmed in the computer and therefore the computer didn't miss it while it was gone.

No, nothing was changed or reprogrammed. I don't think the system is looking for a signal from the sensors. In other words, if the signal isn't there, the system doesn't send a warning light. If the signal is there and the pressure is low, it obviously will send a warning light.
I know everything is working properly because I let air out of my spare tire when I got it back from the dealer and the light came on.
