Anyone know if a firmware update for the head unit in a 2007 limited JBL?

Doubtful, I have never seen one. The only "updates" for any headunit prior to the Entune units used in '12+ vehicles is a Toyota DVD for the Navigation System.

That does beg the question. Does one purchase that? My Garmin usually has a quarterly update. (Forgive stupid questions please my first 4R).

Depends on where you live and how far you go. For example in my area there's a freeway intersection between two freeways that has been changed about 4-5 times in the last 5 years. I haven't updated my GPS in about 4 years and it is always confused at that intersection, but I know where I'm going so I ignore it.
But the world does change and so do roads and streets sometimes (there's a horrid horrid one way set-up in downtown that was finally finished in the last year or two and its absolute garbage, but my GPS has no idea most of those main streets are one-way now).
The good news is that I think you can download most of the Toyota DVDs from torrent websites rather than pay the like $150 they want for 1 disc.
