Welcome.
1) Yes you have VSC (vehicle stability control). It doesn't affect your lift decision.
2) Your Limited most likely has XREAS and that does affect your lift choices. XREAS is handling enhancement system that links shock together (diagonally across the vehicle). Most who want to preserve the XREAS have good things to say about the 'old style' Daystar 2.5. It's still available and it's reported to give a little more than 2.5" in the front. Read the following link, it has all kinds of neat stuff including a description of XREAS. It's for an '03 but it's the same as your '05. http://www.toyota-4runner.org/showthread.php?s=&threadid=1076 & http://www.toyota120.com/GenDocs/2003_4Runner.pdf
3) There's a few company that make rock sliders for 4th gen 4Runners. Do a search here and type "rock sliders Toyota 4Runner" into Google and you'll get a ton of info.

For a good primer on your new T4R read here: http://www.toyota-4runner.org/showthread.php?s=&threadid=4297
