What should I do to achieve lift?

Here's the set-up that works great for me... I am still running the stock UCA and luckily I'm right at 3 on the caster after my 2nd alignment. I am still looking for some reasonable UCAs, because I know my truck will thank me down the road - literally!

Front Lift: 2" Ironman 2007+ FJ - 1/2" shock/spring spacer - 1" Daystar spacers
Rear Lift: 2" Ironman 2007+ FJ (netted 2.5") - 1.5" Day spacers

Front Height: 40" street to center fender.
Rear Height: 42" street to center fender.

Wheels: 16" x 8" (0 offset/4.5" backspace) Pro Comp Xtreme Crawler Series 52
Tires: 285-75-16 Definity Dakota M/T

But as most of these guys have already stated, it's your personal preference as to which manufactures to you choose to mix - just make sure you read, read and read some more on all the frame & body modifications needed to clear a 285+ series mudder or AT. I spent a few hours modifying the front fenders and the front body mounts to keep my 285 M/Ts from rubbing. Having the proper backspacing on your rims is also key!

I wheeled my truck pretty hard after all the installs last weekend - to get everything properly seated, etc - and I have zero rubbing issues anywhere on the truck.

I would not set the bilstein at 2.5. Because the FJ springs are supposed to give up to 1" lift on the front which would put your front at 3.5" lift, which is a lot IMO. plus that puts you outside of the comfort range of 3". My understanding is that after 3" of lift you are in a completely diff category of issues. CV angles and diff drop being one of them.

I would go 1.75 on the front. But that's me.

Agreed on the diff drop... I forgot to mention that I installed that mod on my truck as well. My CV joints are at the same angles now as they were with just the 2.5" Ironman lift alone. I installed the diff drop and the 1" Daystay spacers the same day, and my mechanic checked it out while performing the last alignment and said all is well. We greased everything again just so we can monitor for any future leakage. He did recommend some aftermarket UCAs, though - which is already in the works after I sell my stock wheels/tires this week.
 
Once you get past 3-3.5" the CV's are past the optimal angles. Thus the reason many of us stop at 3-3.5".

IMHO the clearance gained by lifting more negates the front clearance lost when the diff drop is installed and the front skid-plate is lowered due to the diff drop.
