Best way to clean under the hood?

Check out Adam's Polishes website (or any detailing site that has videos). They have detailing videos on there that you can watch for free and there is one about washing under the hood area (Chapter 4). But make sure you cover up your alternator and air intake and that your engine is cool before you begin to wash or clean around it.
I use and all purpose cleaner, or something like simple green, and a soft brush to agitate the dirt, then rinse the engine bay. You can then let your car idle for a bit to dry everything.
I do highly reccommend watching the videos though since they are professionals and can show you more in detail than I have explained.

You don't want to "force" water into areas where it shouldn't be, mainly electrical connectors. They do have seals in them to keep moisture out, but I'm not sure if they designed for 1000psi of water going at it.

This, I just dont get too close with the sprayer whenever the water goes near a connector or harness, Ive never had a problem.
I just soak the engine bay in degreaser and then spray it out (carefully) with the pressure washer and then dry with big microfiber drying towel. It works pretty good.
This was after this.
The engine bay of the car was very clean when i got car also.

If you have acess to a power washer it would be the best route ... get simple green could work or what i used countless times is oven cleaner... yes oven cleaner you only have to let it set for 30 sec and it gets you lookin good but make sure engine is cool and you rinse ASAP
