17" Rims on a 2001?

That would depend on the OD of the tire rather than the wheel...

Biggest concern
I found some SUPER nice OEMs 17s rims with 245/75/17s on them. They are killer and I currently have stock 15s running 245/75/15.
I know the manufacturer probably put on what is best for the vehicle. So what exactly am I alternating by getting something different? Miles per gallon? Ride stability? Suspension ride? Rubbing against wheel wall?

OD is outside diameter.
245 /75 R17 is a 31.5 inch tire compared to a 245 /75 R15, is 29.5"

Due to the difference in tire sizes your speedometer will be off (you'll be going faster than what your speedometer says) and your miles per gallon will most likely go down (you have to account for the odometer/tripometer being off since your speedometer is off). Your ride height will be approximately an inch higher so you will probably notice a difference in handling as well.
