4 Runner Food Truck!

Hey Guys! So I am loving my 2010 Limited, but I have been having this idea of using my rear slider to create kinda sorta a mobile food truck for the weekend evenings? May be town a small trailer with a grill and then set it up and cook some nice dogs and burgers on it and use my sliding tray as a table to stock up on sodas and sides and all kinds of goodies? Was thinking about this for the thursday, friday and saturday night scene in popular areas and events in my city. I know I would need food and business permit, but with the availablility of square for instant credit card swipes and cash ofcourse, the lure of some extra cash on the weekends is making me go crazy, plus the 4 runner has a nice electric outlet in the trunk as well, just in case I need it! What are your thoughts on that?

I need ideas as to how I should section out the trunk area of the truck and what kinds of goodies I should have in there! I know I will have to meet certain regulations to comply with the permit requirements but still I wanted to see what the possibilities are, any ideas and input is appreciated

Do a little more homework before you get too excited. I don't know about California, but here in Utah you can't even run a hot dog or taco cart without a full restaurant-caliber kitchen where you park the cart at night. It has to be sanitary, it has to be completely equipped with food service sinks and prep areas, and it can't be a residential address. It's actually pretty hard to get set up as a mobile vendor around here, I bet Cali is worse.

If you google the topic, you will be a lot less enthusiastic. I tried to get a food truck out to a competitive horseback ride I was managing, and the owner gave me an earful about how much regulation he faces. Ultimately he couldnt do it for me because he couldnt cross the county line.
