I am having trouble finding the normal operating temperature range for the auto transmission in my 2004 4runner v8.
Could someone help me out?

less than 200F is good. my temps are 170F @70MPH on long drive @air temp of 60-70F..
if in a stop go traffic for a 30 min period the temp does rise . in normal low traffic in a 30-45MPH it is 140F.
hi speed does add to the load so the temp does rise even with the high air flow cooling the fluid.
when operating at 200f plus often due to tow or high heat the fluid will need replacing more often. also a larger fluid cooler added is needed to keep it below 200F.

On the highway, mine is 80F hotter than ambient. Pretty much regardless of temperature aside from very cold or very hot extremes.
The fluid downstream of the torque converter can get above 200 in stop and go traffic in the summer. Rarely does my pan temperature get above 185.

How are y'all tracking the temperature?
I have scan gauge II. I set it up to monitor the torque converter and the pan.
when driving the torque converter is higher . when no load it drops down to the pan temp or 5 deg f higher . also pan temp does not change as fast as torque converter.
